50 g caster sugar
zest of ½ lemon
100g margarine (dairyfree if vegan)
135g plain flour
jam or chocolate spread for filling
icing sugar for dusting
- Preheat oven to 170°C / fan 150°C / gas 3
- Beat the sugar, lemon zest and margarine until fluffy. Add the flour and combine everything to make a smooth dough
- Roll the dough out on a floured surface to 5mm thickness. Cut out shapes using a large cutter, then stamp out a small heart/star/circle shape from half of the biscuits.. Place on a baking sheet lined with bakewell paper and bake for 15 - 20 mins until they are a light golden colour. Allow to cool.
- Assemble by spreading jam or chocolate spread on the bottom halves and gently sandwich the biscuits together. Dust lightly with icing sugar.
