For the sponge: 8oz flour ½ tsp baking powder 4oz caster sugar 4oz butter 1tsp cinnamon milk 2 egg yolks | For the topping: apricot jam 2 egg whites 2 tbsp sugar |
- Whisk these ingredients together to make a fairly stiff sponge mixture
- Preheat oven to 200°C (gas 6)
- Butter a pudding dish and put in sponge mixture, levelling the top
- Bake 20 minutes. Cool on a wire rack
- Turn oven down to 160° (gas 3)
- Spread top of the cake with apricot jam
- Whisk 2 egg whites with the sugar. Pile on cake
- Bake for approx. 20 minutes.
