Ingredients 225g plain flour Pinch of salt 175g soft dark brown sugar 2 large eggs | 2 tsp baking powder 1 tsp mixed spice (heaped) 150g butter 4 medium apples (sharp eating ones) |
- Heat oven to 160°, gas mark 3 and grease 20cm round cake tin
- Whisk together the flour, butter, sugar, eggs, baking power, salt and spice
- Chop the apples (unpeeled) into smallish pieces, and stir into the mixture until distributed.
- Pour into tin and smooth the top. Then sprinkle with demerara sugar
- Bake for 1½ hours. Allow to cool for at least 10 minutes in tin
