The Perfect Apple Cake

Ingredients

225g plain flour                              
Pinch of salt                                
175g soft dark brown sugar  
2 large eggs

 
2 tsp baking powder                  
1 tsp mixed spice (heaped)      
150g butter
4 medium apples (sharp eating ones)

Method

1. Heat oven to 160°, gas mark 3 and grease 20cm round cake tin
   
2. Whisk together the flour, butter, sugar, eggs, baking power, salt and spice
   
3. Chop the apples (unpeeled) into smallish pieces, and stir into the mixture until distributed.
   
4. Pour into tin and smooth the top. Then sprinkle with demerara sugar
   
5. Bake for 1½ hours. Allow to cool for at least 10 minutes in tin
